Sausage and Potatoes

This sausage and potatoes recipe is the perfect hearty and cozy comfort food dinner ready in just 30 minutes. With tender potatoes, smoky sausage, and a kick of spice, this one-pot recipe is perfect on a cold night!

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 large yellow onion, sliced
  • 1 bell pepper, sliced (any color works)
  • 1 teaspoon garlic, minced
  • ¼ cup chicken broth, or water
  • 1 lb baby yellow potatoes, cut in half
  • 1 lb smoked sausage, cut into slices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon crushed red pepper
  • Salt and pepper to taste
  • Sliced green onions, optional garnish

Instructions 

  • Over medium heat, add the olive oil and butter to a medium size skillet. 
  • When butter has melted, add the onions and sauté, stirring often, until translucent, about 8 minutes.
  • Add bell pepper and garlic and continue to sautéing for 5 minutes, stirring often.
  • Add the water and stir, getting all of the bits off of the bottom of the pan.
  • Add the potatoes, sausage, garlic powder, onion powder and crushed red pepper, stir until well combined. 
  • Cover loosely with the lid. Cook for 10 minutes, stirring occasionally, until the potatoes are fork tender.
  • When serving, top with a little chopped green onion, if desired. Serve warm.

Notes

Storage: Store leftovers in an airtight container in the fridge for 4 days, or in the freezer for 3 months.Reheat leftovers on the stove over medium heat, or in the microwave in 30-second increments. 
Freeze: Let the meal cool entirely, then store it in an airtight container in the freezer for 3 months. For best results, transfer to the fridge to thaw for 24 hours before reheating.
Adjust the Heat: There are a lot of different ways that you can add more heat to sausage and potatoes. The easiest way is to use spicy smoked sausage or increase the number of chili flakes used. However, you can also add cayenne pepper or try adding fresh jalapeños, or serranos, with the bell peppers. If this recipe looks too spicy for you, just dial back the red pepper flakes.
Deglaze: This recipe calls for you to deglaze the pan with water or chicken stock. Deglazing is a great opportunity to add more flavor to your one-pan sausage and potatoes, so we recommend using the broth, or any other flavorful liquid. You can use white wine, veggie broth, or beef broth to deglaze this easy dinner.
