Total Time25 minutes

Ingredients

  • 1 pound potatoes, diced
  • 1 medium yellow onion, chopped
  • 1 tablespoon avocado oil or olive oil
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 2 teaspoons pepper

Instructions

  • Preheat air fryer to 375°F.
  • In a medium bowl, add potatoes and onions. Toss with oil, garlic powder, salt, and pepper.
  • Place the potatoes in the air fryer basket and cook for 12 to 15 minutes, until potatoes are cooked through. Shake the basket, or stir the potatoes/onion, halfway through the cooking time.
  • Serve immediately!

Notes

  • Storage: It's best to store these onions and potatoes in an air-tight container in the fridge. To reheat, you can pop them right back in the air fryer for a few minutes and they will crisp right back up.
  • Freezing: We recommend freezing this recipe in small freezer bags and then thawing them in the fridge before you reheat them. Again, you can reheat them in the air fryer for a few minutes for the best results.
