Cheesy Scalloped Potatoes With Ham

These Cheesy Scalloped Potatoes with Ham are decadent, comforting, and oh so satisfying! Classic quick and hearty scalloped potatoes are smothered in a creamy white sauce with ham and topped with cheese. This is comfort food at its most delicious!

Ingredients

  • cup butter
  • 1 medium yellow onion, finely diced
  • cup all purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 ½ cups milk
  • 2 pounds gold potatoes, sliced evenly into 1/8” thick slices
  • 2 cups chopped ham
  • 2 cups shredded cheddar cheese

Instructions 

  • Preheat oven to 350°F. Coat a 9x13 pan with non stick spray, set aside.
  • In a medium size pan, melt the butter over medium heat and add the onion. Sauté onion until it softens and starts becoming translucent, about 3 to 4 minutes.
  • Then add the flour and seasonings (thyme, salt, and pepper), stirring until you can no longer see the flour and everything is well combined.
  • Slowly add the milk, stirring constantly. Cook mixture over medium heat until bubbling and sauce starts to get thick, about 3 to 4 minutes. Stir in ham and remove from the heat.
  • In the bottom of the prepared casserole dish, spread 1/2 cup of the sauce into the bottom of the dish. Then layer a third of the potatoes on top of the sauce. Repeat layering the sauce and potatoes until all are used, finishing with the sauce on top.
  • Top casserole with shredded cheese and cover with foil. Bake in oven for 50 minutes. Remove foil and return to oven for 10 minutes more.
  • Let casserole rest on counter for 10 minutes before serving.

Notes

Prep Ahead: You can fully prepare the casserole up until the baking stage. Instead of baking it, cover the casserole and refrigerate it for up to 48 hours. Then when ready to serve it, let the casserole warm up on the counter for about 45 minutes and then bake it according to directions in the recipe card!
Storage: Place leftovers in an airtight container for up to 5 days in the refrigerator.
