Asian Chicken Salad

This colorful Asian chicken salad is refreshing, flavorful, and perfect for summer. Made with chopped coleslaw, tender chicken, crisp vegetables, and crunchy chow mein noodles, you won't be able to get enough of it!

Ingredients

  • 1 (16 oz) bag coleslaw
  • 2 cups cooked and shredded chicken
  • 8 oz fresh bean sprouts
  • 1 bell pepper, julienned
  • 2 cups julienned cucumber
  • 1 cup carrot sticks
  • 5 green onions, sliced (divided)
  • ½ cup chopped cilantro
  • 4 oz sliced almonds
  • 3 oz chow mein noodles, or fried wonton strips
  • Asian Salad Dressing, to taste

Instructions 

  • Add the coleslaw, chicken, bean sprouts, bell pepper, cucumber, carrot sticks, half of the green onions, cilantro, and almonds to a large salad bowl. Toss until well combined.
  • When you are ready to serve, add the Asian Salad Dressing and toss again. Garnish with more chopped green onions and crunchy noodles and serve immediately.
