Cajun Chicken Pasta

This quick and easy Cajun Chicken Pasta is ready in 30 minutes with just one-pot! A creamy cajun-inspired sauce coats pasta, bell peppers, onions, and pan-seared chicken breasts to create this easy weeknight dinner.

Ingredients

  • 2 tablespoons olive oil
  • 2-3 boneless, skinless chicken breasts
  • 1 tablespoon cajun seasoning
  • 1 large yellow onion, diced
  • 1 large yellow bell pepper, seeded and diced
  • 1 large red bell pepper, seeded and diced
  • 1 bunch of green onion, sliced and divided
  • 3 cups low sodium chicken broth
  • 10 oz penne pasta
  • 8 oz cream cheese, softened

Instructions 

  • In a large heavy bottomed skillet over medium high heat, add olive oil and sear the chicken breast on each side for about 5 minutes, until nice and golden.
  • Add bell peppers, onion and half of the sliced green onions, stirring often and continue to cook for 5 more minutes, until vegetables are softened.
  • Add cajun seasoning, chicken broth and pasta. Bring to a low boil and cook for 10 minutes or until pasta is al dente.
  • Cut the cream cheese into blocks and stir until melted and creamy. Taste and season with extra cajun seasoning, salt and or pepper, to taste as needed. Top with remaining sliced green onions and serve immediately.
