Cheesy Ground Beef Zucchini Skillet

This easy Cheesy Ground Beef Zucchini Skillet is low carb, high protein, and loaded with flavor! This 30 minute dinner is a staple in my weeknight routine.

Ingredients

  • 1 lb lean ground beef, or turkey
  • 1 medium onion, chopped
  • 2 teaspoons minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon beef better than bouillon
  • ½ teaspoon crushed red pepper flakes, optional
  • 1 (14.5 oz) can petite fire roasted tomatoes
  • 3-4 small zucchini, cut into quarter pieces
  • 1 cup shredded mozzarella cheese

Instructions 

  • In a large skillet over medium heat, brown the ground beef with the onion. Use a wooden spoon to break up and crumble the meat as it cooks until no longer pink. If you have a lot of excess grease, drain off the excess before continuing.
  • Next, add the garlic, Worcestershire sauce, Italian seasoning, beef bullion, red pepper, and tomatoes (do not drain the tomatoes!). Bring to a simmer and cook for 5 minutes, stirring occasionally.
  • Add the zucchini and simmer for 10 more minutes, just until the zucchini start to soften.
  • Top with shredded mozzarella, turn heat to low, and cover with a lid for 3-5 minutes, until the cheese has melted. Serve immediately.

Notes

Does This Make Good Leftovers? This dish is best served fresh, but we still enjoy the leftovers for lunch the next day! We prefer to serve the leftovers over some kind of starch (like rice or cauliflower rice) as there will be more liquid once reheated.
How To Store: Let your leftovers fully cool to room temperature before storing in an airtight container. Properly stored, your leftovers will stay good for about 3 days.
How To Reheat: Reheat for just 30 seconds at a time in the microwave, stirring each time it stops, until warmed all the way through. I recommend adding a little fresh cheese on top!
