Cheesy Rotel Chicken Pasta Recipe

Ready in 20-minutes with just 5 ingredients, this easy Rotel chicken pasta recipe is the best cheesy comfort food dinner for busy weeknights!

Ingredients

  • 12 oz medium egg noodles
  • 2 lbs cooked and shredded chicken
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, mild, original, or hot
  • 1 (10.5 oz) can cream of mushroom soup
  • 16 oz Velveeta cheese, cubed
  • sliced green onions, optional topping

Instructions 

  • Cook the egg noodles in salted water until al dente, according to package directions. Then drain, but do not rinse, and set aside.
  • Using the same pot over medium-low heat, add the chicken, Rotel, soup and Velveeta. Mix everything together, continuing to stir while the cheese melts and everything blends together, about 3 to 5 minutes. 
  • Add egg noodles to the pot and stir until well combined. Serve immediately! We like to add a little green onion on top, when serving.

Notes

Store: While we like this best served fresh, the leftovers are still tasty! Transfer cooled leftovers to an airtight container and store in the fridge for up to 3 days. 
Reheating: Reheat leftovers on the stove over low heat or in the microwave. Add a splash of milk or chicken broth to keep the sauce creamy as it warms.
