Mediterranean Quinoa Salad

If you’re looking for a fresh, brightly flavored salad that actually hits the spot, you’ve found it with this Mediterranean Quinoa Salad with Chicken! It’s as filling as it is vibrant with ingredients like grilled chicken, Kalamata olives, and an array of fresh veggies.

Ingredients

  • 2 cups cooked quinoa
  • 1 lb Grilled Chicken
  • 2 cups sliced cucumber
  • 1 cup Cherry tomatoes
  • 1 cup kalamata olives
  • 2 cups chick peas drained
  • ½ cup red bell pepper
  • ½ cup red onion
  • ¾ cup crumbled feta cheese
  • Greek Salad Dressing, to taste
  • Pita and Tzatziki, if desired

Instructions 

  • Divide the quinoa into 4 bowls. 
  • Add chicken and remaining ingredients on top of quinoa. 
  • Top with Greek Salad Dressing. You can toss salad to combine or serve it as plated. 
  • Serve with pita and tzatziki, if desired!

Notes

Storage: Once dressed with salad dressing, the salad is best served within a few hours. After that, it can get soggy, but is still safe to eat for up to 5 days. If you store the ingredients separately, they are good for up to a week!
