Skillet Lasagna

Skillet lasagna is the shortcut one-pan version of a classic Sunday lasagna. Tender noodles are simmered right in a rich sausage marinara and then topped with bubbly broiled cheese. No layering, no boiling, and only one pan to wash!

Ingredients

  • 1 lb ground sausage
  • 1 medium onion, diced
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • 24 oz marinara sauce
  • 1 ¼ cups chicken broth
  • 10 uncooked lasagna noodles, broken into 2-inch pieces
  • 2 cups cottage cheese, divided, I blend mine until it's smooth like ricotta
  • 1 ½ cups shredded mozzarella cheese, divided
  • ¼ cup grated parmesan cheese, plus more for serving

Instructions 

  • In a large skillet over medium heat, brown the ground sausage with the onion. Use a wooden spoon to break up and crumble the meat as it cooks until no longer pink. If you have a lot of excess grease, drain it off before continuing.
  • Add the minced garlic, Italian seasoning, marinara sauce, and broth. Bring to a soft boil. Carefully add the lasagna noodles, making sure to cover with the sauce. Turn the heat down to a low simmer and place a lid loosely over the skillet. Stir frequently and separate the noodles as needed. Cook for 15 minutes, check for the noodles to be al dente. Remove from the heat.
  • Preheat the broiler on high and place a rack 2 levels down from the broiler.
  • Stir 1 cup of cottage cheese and 1 cup of mozzarella into the skillet. Spread the remaining cup of cottage cheese, ½ cup mozzarella, and parmesan cheese on top.
  • Place under the broiler for 1 to 2 minutes or until bubbly and the cheese is melted and lightly browned. Let the lasagna rest for 5 minutes before serving.

Notes

Store: Transfer cooled leftovers to an airtight container and store in the fridge for up to 4 days.
Reheat: Microwave in short bursts or warm in a covered skillet, adding a splash of broth if needed.
Freeze: Transfer cooled leftovers to an airtight freezer-safe container. Freeze for up to 3 months. Thaw overnight in the fridge before reheating.
