Crockpot Cajun Chicken is the ultimate set-it-and-forget-it recipe with just 3 ingredients! Chicken breasts are smothered with butter and bold Cajun seasoning, then cooked low and slow until they're tender as can be.

Ingredients

  • 2 lbs boneless, skinless chicken breasts, or thighs
  • ½ cup (1 stick) butter, softened
  • 2 teaspoons Cajun seasoning

Instructions 

  • Coat the chicken front and back with butter and add to the crockpot. Sprinkle the Cajun seasoning evenly over the top.
  • Cover and cook on low for 6 to 8 hours, or on high for 4 to 6 hours, until chicken is cooked through and fork tender. Serve whole, sliced, or shredded on top of rice, mashed potatoes, or noodles.

Notes

How to Store: Store leftovers in an airtight container for up to 4 days. Or freeze in an airtight freezer safe bag for up to 3 months.
Reheat: Warm in the microwave or on the stovetop until heated through. Can add a splash of chicken broth, or more butter, if the chicken has dried out a little.
