Instructions

  • In a large skillet over medium heat, melt the butter. Add the almonds and toast until fragrant and golden brown, about 1-2 minutes. Remove the almonds from the skillet and set aside.
  • Add the olive oil and shallots to the skillet and sauté over medium heat for 2 minutes, until softened. Add the garlic and continue to sauté for one more minute.
  • Add the green beans and water, stirring to coat with the onion and garlic. Loosely cover the skillet with the lid. Cook green beans over low to medium heat, stirring occasionally, for 10 to 15 minutes, until the beans soften to your desired texture.
  • Season with salt and pepper, to taste, and then top with the toasted almonds. Serve immediately.

Notes

Storage: Store leftovers in an airtight container in the fridge for up to 5 days.
Reheat: The best way to reheat them is on the stovetop, over medium heat, while stirring constantly. You can also reheat them in the microwave at 80% power in 20-second increments until they’re heated all the way through.
Freeze: Let the green beans cool completely, then store them in an airtight container in the freezer for up to 4 months. Thaw or defrost entirely before you reheat green beans almondine.
Toasting The Almonds: Cook the almonds until they’re fragrant and have just started to change color. If you don’t toast the almonds enough, the dish will be a little bland, and if you toast them too much, it will taste very bitter. If you burn the nuts, toss them out and start again.
Add Lemon: Sometimes we like to add a squeeze of lemon to the green beans almondine right before topping it with the almonds. This adds brightness and acidity and really makes the beans pop with a zesty freshness.
