  • Butter: Since you are only using 1 tablespoon of butter, feel free to use salted or unsalted butter.
  • Sliced Almonds
  • Olive Oil: Avocado oil also works great.
  • Shallots
  • Garlic: Fresh garlic will give you the most flavor.
  • Green Beans: Fresh green beans will give you the best results, but frozen green beans can be used in a pinch.
  • Water
  • Salt
  • Pepper: For best results, always use freshly cracked pepper.

How to Make Green Beans Almondine

These veggies are coated with lots of garlic, then topped with almonds that have been toasted in butter. The green beans have the perfect crunch to them and are so easy to make. For more detailed instructions, check out the recipe card at the end of the article. 

  • Toast the nuts. Toast the almonds in a skillet with butter. 
  • Cook the aromatics. Sauté the shallots and garlic in olive oil until softened.
  • Add the beans. Cook the green beans with the shallots and garlic and some water until they’re the desired texture.
  • Serve. Season with salt and pepper, top with toasted almonds, and serve.

Tips For the Best Green Beans With Almonds

This fresh and healthy side dish is so easy to make, but it’s always great to have a few tips to help you out.

  • Toasting the Almonds: The buttery sliced almonds are the stars of this dish, so it’s important to cook them well. Don’t get the pan too hot when toasting the nuts, and make sure you cook them until they’re fragrant and have just started to change color. If you don’t toast the almonds enough, the dish will be a little bland, and if you toast them too much, it will taste very bitter. 
  • Use Fresh Garlic: We always recommend using fresh garlic when you cook. But it’s especially important for a recipe like this, where the garlic is a central ingredient. These tender green beans are packed with garlic, so opt for fresh garlic rather than the pre-minced stuff or garlic in oil.
  • Buy Trimmed Beans: If you want to save a little bit of time, you can buy green beans that already have the ends cut off. Then you won’t have to prep the veggies when making this dish.
  • Add Lemon: Sometimes we like to add a squeeze of lemon to the green beans almondine right before topping it with the almonds. This adds brightness and acidity and really makes the beans pop with a zesty freshness.

Serving Suggestions

These green beans with almonds will last in an airtight container in the fridge for up to 5 days. The best way to reheat them is on the stovetop, over medium heat, while stirring constantly. You can also reheat them in the microwave at 80% power in 20-second increments until they’re heated all the way through.

Green Beans Almondine

Green beans almondine are green beans sautéed with garlic and shallots, and topped with buttery, toasted almonds. It's a fancy recipe that looks impressive, but is so easy to make.

Ingredients

  • 1 tablespoon butter
  • 3 tablespoons sliced almonds
  • 1 tablespoon olive oil
  • 2 shallots, finely diced
  • 1 tablespoon minced garlic
  • 1 lb fresh green beans, rinsed and trimmed
  • 2 tablespoons water
  • Salt and pepper, to taste

Instructions 

  • In a large skillet over medium heat, melt the butter. Add the almonds and toast until fragrant and golden brown, about 1-2 minutes. Remove the almonds from the skillet and set aside.
  • Add the olive oil and shallots to the skillet and sauté over medium heat for 2 minutes, until softened. Add the garlic and continue to sauté for one more minute.
  • Add the green beans and water, stirring to coat with the onion and garlic. Loosely cover the skillet with the lid. Cook green beans over low to medium heat, stirring occasionally, for 10 to 15 minutes, until the beans soften to your desired texture. 
  • Season with salt and pepper, to taste, and then top with the toasted almonds. Serve immediately.
