Rotel Sausage Dip

This super easy and cheesy Velveeta Rotel Sausage Dip is made with just 4 ingredients in 10 minutes! It’s a cheesy dip you can keep warm in a crockpot, perfect for parties and game day.

Ingredients

  • 16 oz mild or hot breakfast sausage, or spicy Italian sausage
  • 16 oz Velveeta, cut into cubes
  • 4 oz cream cheese
  • 2 (10 oz) cans Rotel, drain only one can

Instructions 

  • In a large skillet, brown the ground pork sausage over medium heat until the meat is no longer pink. Use a spatula or wooden spoon to break apart the meat into small pieces as it cooks. (A potato masher is great for breaking up ground meat while browning!)
  • Add Velveeta, cream cheese and Rotel mix everything together and keep stirring while the cheese melts and blends with the meat and tomatoes, about 3 minutes.
  • Serve warm topped with fresh cilantro, sliced jalapeños and chopped red onion.

Notes

Storage: Store cooled dip in an airtight container in the fridge for up to 5 days.
Reheat: You can reheat leftover dip on the stove, or use a crockpot set to low. Either way, make sure you stir it often until everything is melted again so the bottom doesn’t burn. If the dip is thick, add a touch of milk to thin it out.
Taco Meat: Instead of ground breakfast sausage, you can use our favorite taco meat with taco seasoning instead for a more tex-mex flavor.
Make Ahead: Make everything according to the recipe and store in the fridge for up to 2 days. When you’re ready to serve, reheat the dip on the stove or in a crock pot.
Crockpot: We recommend keeping the dip warm in a slow cooker when serving a crowd. Once everything is melted and warm, add the dip to a crockpot and keep it on warm. Stirring occasionally to keep it from forming a film on top.
Spice Level: We used Jimmy Dean hot breakfast sausage and mild Rotel. The overall taste was peppery, but not spicy hot. If you’re sensitive to spice, use mild sausage and mild Rotel. If you love the heat, use hot or extra hot!
Warm Chips: This may seem like an unnecessary step, but it’s really good! Warm your tortilla chips in the microwave for 30 seconds or the oven on 350°F for 5-10 minutes.
