Stewed Okra and Tomatoes

Stewed Okra and Tomatoes is an easy side that is ready in less than 30 minutes and only takes a few ingredients.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 tablespoon minced garlic
  • 1 pound okra, cut into ½ inch slices
  • 1 can, 14.5 oz stewed tomatoes, do not drain
  • 1 tablespoon cajun seasoning

Instructions 

  • Using a medium to large skillet over medium heat, add the olive oil and onion. Sauté for 3 minutes then add the garlic and sauté for 30 seconds more. 
  • Add the okra and stewed tomatoes. Stir and let simmer for 15 to 20 minutes, until the okra is tender. You can half over the skillet with a lid to speed up the cooking, just be careful to stir a little more often. 
  • Once cooked give the okra a taste test to see if you want to add more cajun seasoning or salt and pepper. (I did not add salt because the cajun seasoning has a lot already.) Serve immediately.

Notes

Storage: Store leftover Stewed Okra and Tomatoes in an airtight container in the fridge for up to 3 days. You can reheat leftovers on the stovetop in a small pan or the microwave.
Cajun Seasoning: If you don't have time to make your own homemade cajun seasoning, our favorite store bought version is Slap Ya Mama.
