Corn Fritters

This crispy corn fritters recipe with spicy cayenne pepper and crunchy green onions will be your go-to veggie side for the summer.

Ingredients

  • 1 (8.5 oz) box Jiffy Corn Muffin Mix
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • 1 large egg
  • cup whole milk
  • 1 tablespoon melted butter
  • 2 cups corn kernels, fresh or frozen
  • ½ cup chopped green onions
  • 2 to 3 tablespoons oil, for frying

Instructions 

  • Line a baking sheet with parchment paper or paper towels and set aside.
  • In a large bowl, stir to combine the muffin mix, onion powder, and cayenne pepper. Make a well in the center and add the egg, milk, and butter. Stirring until just combined. Fold in the corn and green onions.
  • Heat oil in a large skillet to medium heat. Use enough oil to cover the bottom of the pan. If you are cooking in batches you may need to add a little oil as you go.
  • Carefully drop 1/3 cup of batter it into the hot oil and use the back of a spoon to flatten the batter. Fry on each side, for about 3 to 4 minutes. After you flip the fritters use a spatula to gently press down, this will help to flatten them out and cook the inside evenly. Try and flip the fritters only once.
  • Transfer the fritters to prepared tray. Serve warm, with a little creamy Tajin sauce or sour cream, if desired!

Notes

Fridge: Place them in an airtight container for up to 4 days.
Freezer: Spread them out on a baking sheet and freeze for 1 hour or until firm. Transfer to a freezer bag. Freeze for up to 3 months. Thaw overnight in the fridge or on the counter for 15 minutes.
Reheat: Microwave them in 15-second increments until warm. You can also use the air fryer at 400°F for 2 to 3 minutes to get them nice and crispy again!
