Recently, I served these up next to some bacon jalapeño popper dogs and it was quite possibly the best summer party meal ever! I don’t know which went quicker – the fritters or the dogs. All I know is that I didn’t end up with any leftovers of either dish. Take a quick look at what makes these fritters so crave-worthy:

- Jiffy Corn Muffin Mix: This has always been our tried and true go-to, but you can feel free to use your favorite brand.
- Cayenne Pepper: Add more or less to adjust the amount of heat in the corn fritters.
- Milk: I prefer whole milk for a creamier taste, but low-fat can be used instead.
- Corn: We typically use frozen corn or fresh corn right off the cob. Drained canned corn will also work, but it will not have the same chewy texture.
- Oil: Vegetable or avocado oil are best for frying as they have a high smoke point. Olive oil can burn at higher temperatures.
How To Make This Recipe For Corn Fritters
A bit of corn muffin mix helps bind everything together for perfectly golden fritters. Below is a quick recipe overview, but please scroll to the recipe card at the bottom of this post for full instructions.
- Mix the dry ingredients: Whisk all of the dry ingredients in a bowl. Make a well in the center.
- Add the wet ingredients: Crack the egg into the well. Pour in milk and butter. Stir until just-combined. Fold in the corn and green onions.
- Prep the oil: Heat the oil in a skillet. Line a baking sheet with parchment paper.
- Fry them: Drop some batter into the oil and flatten it into a thin round. Fry each fritter for 3 to 4 minutes per side. Remove it from the heat and set it on a baking sheet lined with parchment paper or paper towels. Repeat for all the batter.
- Serve: Let the fritters cool for 5 minutes, serve, and enjoy!
Cook’s Tips and Variations
- More veggies: Stir 1/4 to 1/2 cup diced bell peppers or bean sprouts into the batter for more crunch and fresh flavor.
- Flip once: Try to only flip the patties once they’re golden, that way you only need to flip one time! It’s not the end of the world if you flip more times, but the patties will absorb more oil.
- Drain them: Once fried, set the fritters on a paper towel-lined plate to drain excess oil. Flip them after about 20 to 30 seconds to remove oil from the other side as well.
- More spices: Stir 1/4 to 1/2 teaspoon dried oregano, ground cumin, taco seasoning, or smoked paprika into the dry ingredients for even more flavor.
- Avoid high heat: You need to cook these fritters with medium heat. Using high heat won’t give the interior a chance to cook but will burn the outside of the corn fritter.
What To Serve With Homemade Corn Fritters
To serve corn fritters, top them with a dollop of sour cream, mango salsa, my favorite creamy Tajin Sauce, or hot sauce. They make a great appetizer, snack, or easy vegetable side dish. Here are a few main dishes to consider serving them alongside:

- BBQ: Crockpot BBQ chicken is always a crowd-favorite, but we have also been known to serve these fritters with our favorite pulled pork!
Corn Fritters
Ingredients
- 1 (8.5 oz) box Jiffy Corn Muffin Mix
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper
- 1 large egg
- ⅓ cup whole milk
- 1 tablespoon melted butter
- 2 cups corn kernels, fresh or frozen
- ½ cup chopped green onions
- 2 to 3 tablespoons oil, for frying
Instructions
- Line a baking sheet with parchment paper or paper towels and set aside.
- In a large bowl, stir to combine the muffin mix, onion powder, and cayenne pepper. Make a well in the center and add the egg, milk, and butter. Stirring until just combined. Fold in the corn and green onions.
- Heat oil in a large skillet to medium heat. Use enough oil to cover the bottom of the pan. If you are cooking in batches you may need to add a little oil as you go.
- Carefully drop 1/3 cup of batter it into the hot oil and use the back of a spoon to flatten the batter. Fry on each side, for about 3 to 4 minutes. After you flip the fritters use a spatula to gently press down, this will help to flatten them out and cook the inside evenly. Try and flip the fritters only once.
- Transfer the fritters to prepared tray. Serve warm, with a little creamy Tajin sauce or sour cream, if desired!
