I’ve been all about simplicity lately, and this cheesy hamburger hash recipe is the very definition of keeping it easy! You essentially just toss ground beef, potatoes, onions, and bell peppers into a skillet and serve with as much cheese as your heart desires.

It doesn’t get much easier (or satisfying) than this! Whether I’m making dinner for myself and my husband or I have the grandkids over, this is a picky-eater approved dinner that I know everyone’s going to enjoy… and usually ask for seconds of.

  • Ground Beef: I like to use lean ground beef. If you go for ground chuck, you’ll have more excess grease to drain from the pan. Of course, you could always use ground turkey if preferred.
  • Onion: A white or yellow onion works best. Avoid using a red onion.
  • Bell Pepper: Any color will taste great in this recipe, so just use your favorite. Keep in mind that yellow, red, and orange bell peppers are sweeter, while green are the most pungent.
  • Green Onions: Some get mixed in at the beginning, some are reserved for garnishing at the end.
  • Worcestershire Sauce: I don’t recommend swapping or omitting this ingredient! It’s key to getting that classic hamburger flavor. Just a tablespoon adds a savory richness that makes this hamburger hash taste like it has simmered all day.
  • Potatoes: I like using Russet potatoes because they hold their shape well and don’t get mushy.
  • Cheddar Cheese: If you can, try to grate it right off the block! Feel free to use more for serving, the more cheese, the better!

How To Make Hamburger Hash

Cut the potatoes into even bite-size cubes. This will help the potatoes to cook quickly and evenly. I prefer to not include the potato skin, but you can leave it on!

Use a wide large skillet. This hamburger hash recipe makes a generous portion, so use a large skillet or sauté pan to give everything room to cook evenly without overcrowding.

Drain grease if needed. Depending on the fat content of your ground meat, you may have extra grease in the skillet after browning. Drain it before adding the other ingredients to avoid a greasy hamburger hash.

Stir occasionally while simmering. Once the potatoes and broth go in, cover the skillet but be sure to stir it every few minutes. This keeps the bottom from sticking and ensures even cooking throughout.

Add more broth if it gets too dry. If your hash starts to look too dry before the potatoes are fully tender, add a splash more beef broth. It’ll help keep everything moist without turning it into soup.

Let the cheese fully melt in. Once you add the shredded cheddar, give it a good stir and a minute or two to melt completely. It blends everything together and creates that creamy, cheesy finish.

Top with extras before serving. More shredded cheddar and chopped green onions on top give great color, flavor, and texture. It’s the easiest way to finish your skillet with a wow factor.

Want more veggies? You could add mushrooms or even a can of drained beans to sneak in more veggies.

Storing and Reheating

This Hamburger hash makes the BEST leftovers! We love enjoying it for lunch later in the week so much that we often fight over the leftovers. My husband even enjoys them for breakfast with a fried egg on top.

Once everything cools to room temperature, you can store your leftovers in an airtight container in the refrigerator for up to 4 days. Microwave for 30 seconds at a time until warmed all the way through.

Ingredients

  • 1 lb lean ground beef, or ground turkey
  • 1 medium onion, diced
  • 1 bell pepper, diced (any color)
  • 3 green onions, chopped, plus more for serving
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • 2 teaspoons garlic powder
  • 1 large russet potato, cut into 1/2 inch cubes, about 1 pound
  • ½ cup beef broth
  • 2 cups shredded cheddar cheese, plus more for serving

Instructions 

  • In a large skillet over medium heat, brown the ground beef with the onion and bell pepper. Use a wooden spoon to break up and crumble the meat as it cooks, until it is no longer pink. If you have a lot of excess grease, drain off the excess before continuing.
  • Add the green onions, Worcestershire sauce, garlic powder, potatoes, and broth. Bring to a simmer, cover pot with the lid and cook for 15 minutes, stirring occasionally, until the potatoes are tender.
  • Add the cheese and stir until melted and mixed in with the meat and potatoes. Serve immediately with more shredded cheese and chopped green onions.
