Crockpot Cube Steak

Crockpot Cube Steak turns one of the cheapest cuts into fork-tender beef smothered in a rich, savory onion gravy. Five minutes of prep in the morning and dinner is waiting when you walk in the door!

Crockpot cube steak and gravy is the budget dinner that tastes like Sunday at Grandma’s. The onions melt down to create a thick and flavorful brown gravy and the steak turns out so tender you can cut it with a spoon.

This crockpot version is just like the traditional smothered cube steak made on the stovetop, but even easier. Just toss it all in the slow cooker in the morning, and by the evening, your dinner’s ready and your kitchen smells way TOO good!

My biggest tip for success is cooking it on the low setting for the full 7 to 8 hours. Lean meat can dry out if you rush it, which is why we take this recipe low and slow for the most unbelievably tender results.

Key Ingredient Notes

  • Cube Steak – If you’d like, you can cut larger pieces into serving size portions before they go into the crockpot. That way it’s easier to serve once cooked.
  • Yellow Onion – This is not optional! It lines the crockpot so the beef never sits on the hot bottom, and it releases the liquid that turns the dry mixes into gravy.
  • Golden Mushroom Soup – It’s not the same as cream of mushroom! Golden mushroom soup is a brown, beef stock based soup, and it’s what gives the gravy that deep pot roast flavor.

How To Make Crockpot Cube Steak and Gravy

Layer everything. Spread half of the onions across the bottom of the crockpot. Lay the cube steak on top, sprinkle with garlic powder, onion powder, and pepper, then cover with the remaining onions.

Mix the gravy. Stir the golden mushroom soup, gravy mixes, onion soup mix, and Worcestershire together, then spread it over the top so everything is covered.

Cook low and slow. Cover and cook. I like to cook on the low setting for about 7 to 8 hours for the most tender results.

📌 Ellen’s Recipe Tips

  • Resist adding water. The gravy mix looks thick going in. That’s intentional! The onions and beef give off plenty of liquid as they cook. Extra water will just thin out the gravy too much and dilute the flavor.
  • Cook on low if you can. Low heat gives the lean meat time to turn tender without drying it out.
  • Keep the lid on. Every time you open the lid to peek, you release heat and steam, which prolongs the cook time.
  • Lift, don’t stir. By the time it’s ready to serve, the meat will be VERY tender. Lift it gently from the crockpot, and be careful not to stir it and break it apart.

Storing Leftovers

Slow cooker cube steak and gravy makes amazing leftovers! Let everything cool to room temperature before transferring to an airtight container and storing in the fridge for up to 4 days. Make sure to store the beef with the gravy to help keep it moist.

The gravy will thicken a lot as it chills, which is perfectly normal. When you reheat, you may want to add a small splash of water or broth to help loosen it back up again.

Ingredients

  • 1 large yellow onion, sliced
  • 2 lbs cube steak
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon pepper
  • 1 (10.5 oz) can golden mushroom soup
  • 2 (.87 oz) packets brown gravy mix, dry mix only
  • 1 (1 oz) packet onion soup mix, dry mix only
  • 1 tablespoon Worcestershire sauce

Instructions 

  • Grease a 7-quart crockpot with non-stick cooking spray. Line the bottom of the crockpot with half of the sliced onions.
  • Lay steak on top of the onions. Season the cube steak with garlic powder, onion powder, and pepper. Top with the remaining onions.
  • In a medium bowl, mix together soup, gravy, onion soup mix, and Worcestershire sauce. Pour over the onions and steak.
  • Place the lid on the crockpot and cook on low 7 to 8 hours, or high 5 to 6 hours, until steak is fork tender. I prefer to cook cube steak on low so that it comes out tender! Serve immediately with mashed potatoes, pasta, rice, or your favorite vegetables.
