If you aren’t craving an air fryer hamburger, this is the BEST way to transform hamburger meat into something brand new! Juicy hamburger steaks are simmered in a rich, savory onion gravy with tender slices of potato soaking up all that goodness… It’s a complete meal all in one skillet.

Dinner doesn’t have to be complicated! With a handful of pantry staples and a single skillet, you can serve up this hamburger steak recipe. Check the recipe card at the bottom of the post for the full ingredient list.
- Hamburger Patties: We typically use beef patties that are 75% lean, 25% fat, but you can use any kind you have on hand.
- Steak Seasoning: Our easy to make steak seasoning is the best, but feel free to use store bought instead.
- Onion: You can use a yellow or white onion, both will work great in this recipe.
- Potatoes: We used a russet potato, but red potatoes or Yukon gold potatoes would also work well. Thinly slice them — there is no need to peel the potatoes unless you want to!
- All Purpose Flour: Used to make a roux to thicken the gravy. Check the tips section below to use cornstarch instead.
How to Make Hamburger Steak and Gravy
This dish is nostalgic, reminding many of classic diner-style hamburger steak plates. Here’s a quick tutorial showing you how to make this easy hamburger steak with gravy. Please scroll down to the recipe card for full instructions.
- Let the patties warm up: This step is optional, but highly recommended! Let the hamburger patties sit on the kitchen counter for about 20 minutes prior to cooking so they don’t seize up in the pan. This step really helps to keep them juicy and tender.
- Season the patties: Coat both sides of the hamburger patties with steak seasoning.
- Cook the patties: Cook the patties for about 5 minutes on each side, then remove from the skillet and set aside. Tent with foil to keep warm.
- Add the veggies: Stir the onions in the leftover hot grease and cook until softened. Then, mix in the sliced potatoes and cook until fork tender.
- Make the gravy: Stir in the flour and cook, letting it brown for a minute or two. Then, pour in the beef stock and Worcestershire sauce and stir to thicken the gravy.
- Combine and Serve: Add the patties back to the skillet and let simmer for 5 minutes in the gravy until good and hot again. Serve immediately!
Cook’s Tips & Variations
- Pre-made Patties: We typically buy pre-made hamburger patties to make this recipe nice and easy! If you make your own patties, make sure and use ground meat that has some fat in it. Lean hamburger meat can be very dry.
- Add More Veggies: You can add mushrooms or peas if you’d like. Add them towards the end of the cook time so they don’t become too mushy.
- Make it Low-Carb: Skip the potatoes, or swap them for cauliflower florets or sliced mushrooms.
- Gluten Free: If you can’t use flour, feel free to use cornstarch instead. Whisk 1 tablespoon of cornstarch into 2 tablespoons broth and add to the skillet with the remaining broth. Simmer to thicken.
Storing and Reheating Leftovers
- Storing: While best served fresh, the leftovers can be stored in an airtight container in the fridge for up to 4 days.
- Reheating: Reheat gently in a skillet over medium heat or in the microwave. Add a splash of broth or water to loosen the gravy if needed.
Hamburger Steak and Gravy
Ingredients
- 4 (6 oz) hamburger patties, we used 75%/25%
- 1 tablespoon steak seasoning
- 1 large onion, sliced
- 1 large russet potato, thinly sliced
- 2 tablespoons all-purpose flour
- 1 cup beef stock
- 1 tablespoon Worcestershire sauce
- salt and pepper, to taste
Instructions
- Optional: Set the hamburger patties on the counter 20 minutes before cooking. This helps the meat to stay tender and juicy. Cold meat seizes up in the pan and does not cook as evenly.
- Coat the patties on both sides with steak seasoning. Spray a large skillet with non-stick cooking spray or add a teaspoon of oil in the bottom of the skillet.
- Heat the skillet to medium to medium-high heat and add the hamburger patties. Cook for about 5 minutes on each side, until cooked through. Remove from the skillet and set on a plate. Cover with a lid or foil to keep warm. If there's a lot of grease, use a spoon to skim up all but 2 tablespoons of grease.
- Add the onion to the hot grease, stirring occasionally, cooking for about 3 to 4 minutes until they soften. Add the sliced potatoes and continue to cook for 10 to 12 minutes more, until the potato slices are fork tender.
- Add the flour and stir to combine, cooking the flour for 1 minute. Slowly pour the beef stock and Worcestershire sauce into the hot skillet, carefully stirring and simmering until the gravy begins to thicken.
- Add the hamburger patties back to the skillet and let simmer for 5 minutes more until good and hot. Serve immediately.
