Baked Chicken Breast

Juicy and tender oven baked chicken breasts are so easy to make! All you need are a few simple seasonings, 30 minutes, and an oven!

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil, or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon freshly cracked black pepper
  • ½ teaspoon kosher salt
  • Butter, or garlic herb butter, optional topping

Instructions 

  • Preheat the oven to 350°F. Spray a baking dish with nonstick cooking spray, set aside.
  • Place chicken breasts on a large cutting board. Use a meat tenderizer to pound the breast until they are even in size. (This step may be skipped, but tenderizing the breast will help them cook evenly and become much more tender.)
  • Coat all sides of chicken with olive oil. Season both sides with the garlic powder, onion powder, salt and pepper. Place the chicken in the baking dish in an even layer.
  • Bake uncovered for about 26 minutes, until chicken is cooked through and a meat thermometer reaches 165°F degrees.
  • Remove chicken from the oven. Optional: Add a little pat of butter on top of each breast.
  • Place a piece of foil over the chicken and let it rest 5 to 10 minutes before serving. This will help your chicken to be more tender and juicy!

Notes

Store: Store in an airtight container in the fridge for up to 4 days.
Reheat: You can heat up chicken in the microwave or in the oven based on how much time you have.
Freeze: Place room temperature chicken breasts in an airtight container, or freezer bag, and freeze for up to 3 months. We place parchment paper between the breasts so they’re easier to separate and take out. For best results, thaw overnight in the fridge before reheating.
Browning: You can pop the chicken under the broiler for a minute if you’d like to brown it more on top. Just watch it carefully so it doesn’t burn – this will only take a minute or two.
Don’t Skip the Resting Step: It’s really important to let the chicken rest for at least 5 minutes when it comes out of the oven. This allows the chicken to relax and the juices to redistribute in the meat, making it tender and juicy.
Seasoning: Chicken is super versatile so season these baked chicken breasts any way you like! Try using ranch seasoning, Italian seasoning, chicken taco seasoning, or cajun seasoning for a fun twist. Some people even like to add a little brown sugar on top before baking.
Make Gravy: Make gravy with the pan drippings from baking the chicken for an extra delicious and easy dinner! If you are not making gravy, pour the drippings over the breast before serving. The drippings have lots of flavor and keep the meat juicy.
