- Pork Chops: We used thicker cut boneless pork chops and did not trim off the fat, but bone-in can be used as well.
- Cornstarch: This is what’s going to thicken that gravy to the very best consistency. You can always add more at the end to make it even thicker, if you prefer extra thick gravy!
- Mushrooms: You can use any type of mushrooms you want. Just make sure they’re all chopped to about the same size so they cook evenly.
- Lipton Onion Soup Mix: You will add this as a dry seasoning, do not prepare it according to the package directions! If there’s another brand you like, go for it. We’ve only ever made this recipe with Lipton, so we personally can’t attest to any other brand.
- Worcestershire Sauce: This enhances the savory element of this hearty recipe in the very best way. We don’t recommend substituting it with anything else.
- Cream of Mushroom Soup: We went with the classic combo of crock pot pork chops with mushroom soup, but you can use cream of onion soup or cream of celery soup instead!
How To Make Crock Pot Pork Chops with Mushroom Soup
This one pot recipe couldn’t be any easier, it’s ready to go in just three simple steps! Below is a quick recipe overview, but please scroll to the recipe card at the bottom of this post for full instructions.
- Make the gravy: Whisk the cream of mushroom soup, broth, onion soup mix and Worcestershire sauce right in the slow cooker. Stir in about half of the mushrooms.
- Add the pork chops: Season the meat with garlic powder, salt and pepper before adding it to the crockpot. Add the remaining mushrooms on top.
- Cook: Cover the crockpot with a lid and cook either on low for 6 to 8 hours (recommended method for the most tender results) or on high for 4 to 6 hours.
Cook’s Tips and Variations
- Thick Sliced Mushrooms: When you cook mushrooms for long periods of time, they tend to shrink and disappear. So, we recommend using whole mushrooms and cutting them into thick slices. For bigger mushrooms, we cut them 3 times. For smaller mushrooms, we cut them once down the middle.
- Add Garlic or Onions: If you’re a garlic lover, you can toss in a couple of crushed or minced garlic cloves for an extra layer of flavor. For an additional flavor boost, sauté some onions before adding them to the slow cooker.
- Frozen Pork Chops: If you’re using frozen pork chops, you make need to extend the cooking time by an hour or two. The pork chops are done when they are cooked through and fork tender.
- Brown the Pork Chops: For added depth of flavor, quickly sear the pork chops in a hot skillet before placing them in the slow cooker. We tested it both ways and didn’t feel it made enough difference to be worth the extra effort!
What To Serve With Smothered Pork Chops
- Mashed Potatoes: I can’t think of anything better to serve with smothered pork chops and gravy than our classic best mashed potatoes! You also can’t go wrong with our creamy sour cream mashed potatoes.
- Rice or Noodles: This dish also pairs wonderfully with egg noodles or rice, to soak up all that gravy. Regular rice is great, but it’s also tasty over our parmesan garlic rice!
- Veggies: Lighten up your plate with something vibrant like our roasted green beans, roasted cauliflower or shaved brussels sprouts salad. For a fall twist, try our roasted root vegetables or honey glazed carrots.
- Bread: Cheesy herb crescent rolls go so well with this dish or a slice of our crusty beer bread.
Smothered Crock Pot Pork Chops
Ingredients
- 1 (10.5 oz) can cream of mushroom soup
- 1 (1 oz) packet Lipton onion soup mix, dry mix
- ½ cup beef broth
- 2 tablespoons Worcestershire sauce
- 4 boneless pork chops
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- 8 oz mushrooms, sliced
- 2 tablespoons cornstarch, optional for thickening
Instructions
- Spray a large crockpot with non-stick spray. Whisk to combine the cream of mushroom soup, broth, onion soup mix and Worcestershire sauce in the crockpot. Stir in half of the mushrooms.
- Season the pork chops with the garlic powder, salt, and pepper. Then lay them on top of the soup mixture. Top pork chops with the remaining mushrooms.
- Cover the crockpot with the lid and cook on low for 6 to 8 hours, or high for 4 to 6 hours, until pork chops are cooked through and fork tender. We find the lower and slower cook time creates the most tender pork chops.
- If you like a thicker gravy stir to combine 2 tablespoons water with 2 tablespoons cornstarch in a small bowl. Stir the cornstarch mixture into the crockpot until well combined. Cook for 8 to 10 more minutes, until the gravy has thickened. Serve immediately with a little chopped parsley and mashed potatoes.
