While I love the traditional versions, I’ve gotta say that this sheet pan dinner is so much easier and just as tasty. My husband says it’s just as good, which is saying something, because he’s notoriously picky!

  • Potatoes: Red potatoes are the best for a shrimp boil because they’re waxy and sturdy, so they hold their shape the best and don’t get mushy. However, since this is made on a sheet pan, any kind of potatoes will work just fine. However, we love red potatoes best for that classic combination.
  • Shrimp: You can leave the shells on or peel and devein them — the choice is yours! I like to keep things easy and buy them already peeled and deveined. This also makes it easier to eat!
  • Sausage: Andouille sausage is always my favorite to use, but you can use smoked sausage or any cooked sausage you’d prefer. If your sausage is raw, pre-cook it before using.
  • Seasoning: I always recommend using our homemade Cajun seasoning recipe OR Old Bay seasoning for the very best flavor. However, we like Slap Ya Mama the best if using store bought!

How to Make Sheet Pan Shrimp Boil

We boil the potatoes in the microwave, until just tender, before adding to the sheet pan. Potatoes take a while to roast in the oven and shrimp cook very quickly. If you overcook the shrimp, they’ll quickly become rubbery and chewy. Don’t forget to rinse your shrimp in a colander before cooking! This helps remove any juices that have gathered around them as well as any unwanted debris. You can definitely use frozen shrimp. Just make sure they’re fully thawed, rinsed, and patted dry prior to using.

Yes! Prep the ingredients on the sheet pan in advance, cover tightly and store in the fridge for up to 24 hours.

Ingredients

  • 1 lb small red potatoes, cut into quarters
  • ½ cup chicken broth, or water
  • 2 sticks butter, divided
  • 1 lb fresh large shrimp, shell on or peeled and deveined
  • 1 lb andouille sausage, sliced
  • 4 ears corn, sliced into 2 inch pieces
  • 4 cloves garlic, minced
  • 1 large onion, cut into large slices
  • 2 lemons, one lemon juiced and one lemon sliced
  • 1 tablespoon Cajun seasoning, or Old Bay seasoning

Instructions 

  • Preheat the oven to 400°F.
  • Place the quartered potatoes and chicken broth in a microwave safe bowl with a lid. Cover and microwave for 5 to 7 minutes, until the potatoes are fork tender.
  • Rinse the shrimp in a colander and set aside to drain. Melt half a stick (4 tablespoons) of butter and spread it around the sheet pan to prevent anything from sticking.
  • Add the potatoes, shrimp, sausage, corn, minced garlic, lemon slices, and onions on top of the melted butter and toss to combine. Pour the lemon juice over all the ingredients on the sheet pan.
  • Slice the remaining butter into 1 tablespoon slices and spread the butter evenly over the top of the shrimp mixture. Generously sprinkle the Cajun seasoning over the top.
  • Bake for 10 to 15 minutes, until shrimp are cooked. Once the shrimp curl and turn pink they are done. Serve immediately with the seasoned butter from the sheet pan for dipping!

Notes

How to Store: While a shrimp boil is best served fresh, you can absolutely store the leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat: Reheat in a 350°F oven for 8-10 minutes, adding shrimp during the last 3-4 minutes to avoid overcooking as they will become rubbery. Or reheat in the microwave in 30-second bursts, just until warmed through.
