Why You’ll Love This Stuffed Avocado Recipe
When it comes to guilt free recipes that are actually delicious, this is the first recipe that comes to mind. Here are just a few reasons why you’ll love stuffed avocado as much as we do:
- Filling and Delicious: Sometimes, when you see a completely vegetarian recipe, you may wonder if it’ll fill you up. This caprese filled fried avocado certainly does!
- Tried and True: Also, there’s really nothing better than a tried and true air fryer recipe! We both love fried foods, and using an air fryer is the best way to get that satisfying crunchiness without all the grease and oil.
- Super Easy: Not to mention, air fryers are famously fast at cooking food. This recipe only calls for 7 minutes total of cooking time! Perfect for easy summer cooking.

What Is the Best Air Fryer?
Air fryers are available in two different styles. The most popular type has a drawer/basket that slides in the front and usually doesn’t require preheating. The second type looks similar to a toaster oven and opens with a door, like a mini version of a regular oven.
I have tried a few different air fryers and these are my three favorites depending on your budget and air fryer style preference:
- Large Budget Friendly Basket Style: 8 Qt Gourmia Air Fryer
- Best Large Basket Air Fryer: Power XL 10 Qt Air Fryer
- Toaster Oven Style Air Fryer: Cuisinart Air Fryer Toaster Oven
What You’ll Need
The ingredients needed to make this summertime recipe are fresh, flavorful and delicious. Scroll down to the recipe card for exact amounts.
- Avocados: Pick an avocado that is firm, but has a very slight give to it. Read our air fryer fried avocado post for a description on how to pick a perfect avocado for air frying.
- Seasoned Panko Bread Crumbs: You will need to use panko, not regular, bread crumbs. The Panko bread crumbs stick to the raw avocado much better.
- Tomatoes: Grape or cherry tomatoes are both good options.
- Mozzarella: We love using baby mozzarella balls, but you can also cut a large ball into smaller chunks if you’d like.
- Fresh Basil
- Salt and Pepper
- Balsamic Glaze
- Avocado Oil Spray: Optional but can help make the breadcrumbs extra crunchy!
How to Make Caprese Stuffed Avocado
You’ll be enjoying this tasty fried avocado recipe in less than 20 minutes! Check out the recipe card at the end of this post for detailed directions.
- Caprese: Start by making the fresh caprese filling. Toss to combine the tomatoes, mozzarella balls, basil, salt and pepper in a medium sized mixing bowl. Once combined, set the mixture aside.
- Prep Avocados: Place the breadcrumbs on a plate and press the avocado halves into the breadcrumbs. Coat the halves evenly on all sides. We recommend lightly misting each avocado with cooking spray.
- Cook: Place the avocado halves in the air fryer basket and cook them at 375F for 7 minutes.
- Transfer: Carefully transfer the hot avocados quickly to a plate! They’ll be pretty hot, so be careful not to burn your hands.
- Fill: Finally, fill the air fried avocados with the delicious caprese filling. Drizzle with balsamic glaze, if desired. Serve immediately, and enjoy!
Tips for Best Results
Here are a few tips from our kitchen to ensure your caprese stuffed avocados come out perfectly every time!
- Pick the Right Avocado: Look for an avocado that has black skin, but is still firm. When you press on it, you should feel a slight give, but it should not be soft or mushy. You don’t want it to be super soft like you would use for guacamole. Once they’re cooked in the air fryer, the avocado will soften up perfectly.
- Oil Spray: Feel free to spritz your avocados with a little 100% olive oil or avocado oil spray before you air fry them. In testing, we didn’t notice much difference in the final results, but you can add it if you wish to keep them extra crisp!
- Don’t Mix Your Caprese Salad Too Early: Once sliced, the tomatoes will soften and the juice will start to pool. We prefer to mix together the caprese filling while the avocados are air frying that way it’s fresh and not too juicy.
What to Serve With Air Fried Avocado
This caprese stuffed avocado is actually a perfectly filling lunch all on it’s own. It may surprising at just how full you’ll feel afterwards! But if you’re looking to make this more of a side dish, it would pair really well with a salad (we love our chickpea salad in the summer!) or a piece of sweet potato cornbread. You could also serve this alongside a juicy steak or chicken breast if you don’t want to keep it vegetarian.
Can I Keep Leftovers?
In all honesty, this is one of those recipes that’s better to enjoy fresh. Refrigerated, the avocado won’t stay crisp and the caprese filling gets a little watery. Since these air fryer avocados come together so quickly, we recommend just making as many as you’ll eat in a single sitting.
