  • Beans: We love great northern beans (also known as cannellini beans). Check the notes section below for other kinds of beans you can use!
  • Olive Oil: A good, fruity extra virgin olive oil will add great flavor.
  • Seasonings: Fresh minced garlic, fresh parsley, Italian seasoning, lemon juice, lemon zest, salt, and pepper.

White Bean Salad

This easy white bean salad is bursting with fresh, bold flavors. Extra virgin olive oil, fresh garlic, lemon zest, and fresh herbs combine to make each bite more flavorful than the last. Ready in just 5 minutes, it's a great side dish or make-ahead recipe for your next party or potluck!

Ingredients

  • 2 (15 oz) cans great northern beans, rinsed and drained
  • 3 tablespoons olive oil
  • 2 teaspoons freshly minced garlic
  • 1 teaspoon Italian seasoning
  • ¼ cup chopped fresh parsley
  • juice and zest of 1 lemon
  • Salt and pepper, to taste

Optional Toppings:

  • 1 to 2 cloves thinly sliced garlic
  • chopped fresh parsley
  • crushed red pepper flakes

Instructions 

  • Using a medium size bowl, add the beans, olive oil, minced garlic, Italian seasoning, parsley, lemon zest and juice. Toss to combine.
  • Season with salt and pepper, to taste. Let rest for 10 minutes, or cover and store in the refrigerator until ready to serve for up to 3 days.
  • When ready to serve, garnish with desired toppings.
