- Sweet Potatoes: Don’t peel them. I know it may seem crazy, but the crispy skin is SO good and packed with nutrients!
- Avocado Oil: Because you are cooking these wedges at 400°F, I recommend using avocado oil or vegetable oil as they have a high smoke point and will not burn.
- Cornstarch: Tapioca starch works well too, this helps to keep them crispy!
- Paprika: I prefer smoked paprika for the subtle touch of smokey flavor it adds.
- Cayenne Pepper: You can add more or less to adjust the amount of heat on your fries.
How To Make Sweet Potato Fries in the Air Fryer
The air fryer does most of the work for you, the hardest part is cutting up your sweet potatoes. Make sure to use a sharp knife! Below is a quick recipe overview, but please scroll to the recipe card at the bottom of this post for full instructions.
- Prep the sweet potatoes: Rinse the sweet potatoes and pat them dry. Slice them into 1/4″ thick wedges, keeping them similar in size so they cook evenly.
- Season: Place the sweet potatoes in a large bag and add the cornstarch and seasonings. Shake well until completely coated. You can do this in a bowl too, but it’s a lot harder to evenly coat the wedges.
- Arrange: Add the sweet potatoes to the air fryer basket in an even layer.
- Air fry: Cook for 5 minutes and shake the basket. Cook for another 5 to 6 minutes, or until fork tender on the inside.
- Serve: Remove them from the air fryer and let the sweet potato wedges cool for a minute or two. Serve with your favorite dipping sauce and enjoy!
Cook’s Tips and Variations
- Make fries instead: If you’re not a fan of chunky sweet potato wedges, cut them into 1/4″ thick slices for sweet potato fries. Air fry them for 4 minutes, shake the basket, and cook for another 4-5 minutes or until crispy.
- More seasonings: Add 1/2 tsp ground cumin, 1 tsp taco seasoning, 1 tsp onion powder or 1/2 tsp dried oregano into the seasonings for even more flavor.
- Add cheese: Sprinkle the fries with 1/4 to 1/2 cup shredded mozzarella or parmesan cheese during the last 30 seconds of air frying. Cook until nice and melty. Or once removed from the air fryer, garnish them with a little crumbled goat cheese or feta cheese.
- Spread them out: Make sure there’s at least 1/4″ space between the sweet potatoes in the air fryer. The air needs to be able to flow around freely for the crispiest wedges.
- Check for doneness: All air fryers cook a little differently. Check the wedges after 10 minutes. If they’re fork-tender in the center, they’re ready. If they’re still a little raw, continue to cook them in 1 to 2 minute increments.
- Go sweet: Swap all the seasonings for 1 tablespoon dark brown sugar, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg for a sweet twist.

Air Fryer Sweet Potato Wedges
Ingredients
- 3 medium sweet potatoes
- 1 tablespoon avocado oil
- 1 tablespoon cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- ½ teaspoon sea salt
- ½ teaspoon freshly cracked black pepper
Instructions
- Preheat the air fryer to 400°F. Thoroughly rinse sweet potatoes and pat dry. The skin is left on, so you’ll want to make sure each sweet potato is clean. Place the potatoes on a cutting board and cut the potatoes once, length wise down the middle making 2 halves. Lay each half flat on the cutting board and cut each half into 1/4 inch wedges.
- Place the wedges and oil into a gallon ziplock bag and toss to coat. Then add the cornstarch, garlic powder, paprika, cayenne pepper, salt and pepper. Shake and move the bag around until the wedges are coated with the seasonings.
- Lay the sweet potato wedges in a single layer in the air fryer basket.
- Cook the wedges for 10 to 12 minutes, shaking the basket halfway through. Check at the 10 minute mark, the wedges will be tender and crispy when done.
- Serve immediately with your favorite aioli, hot honey, ketchup or honey mustard!
